This One Pot Lasagna is a quick and comforting stovetop dinner recipe. Savory ground sausage, veggies and lasagna noodles cook up in a bubbly tomato sauce with melty mozzarella on top. Our one-pot dinner formula gets this tasty lasagna on your table in under 30 minutes. It’s the quickest and easiest lasagna recipe you’ll ever make!

With our one-pot formula, you can easily make a variety of different dinners using ingredients you already have on hand. It’s a simple formula that calls for 1 cup of cooked protein, 2 cups of veggies, 8 ounces of pasta and 3 cups of liquid. Combine all of the ingredients in one pot, cook until pasta is al dente, and dinner is done. There’s no guesswork, ingredients are easy to substitute, and your whole family will love these flavorful and satisfying meals.

One-Pot Prep

Recipe substitutions

  • Don’t have ground sausage? Substitute ground beef, turkey or chicken.
  • If you’re out of garlic, use 1/8 teaspoon garlic powder for every clove of garlic the recipe calls for.
  • You can use tomato sauce or fresh tomatoes in place of the diced tomatoes.
  • Any type of pasta can replace the lasagna noodles in this recipe.
  • If you don’t have tomato juice, use vegetable juice, broth or Bloody Mary mix.

How to make one-pot lasagna

  • In a GoodCook Deep Sauté Pan, heat olive oil over medium-high heat. 
  • Add garlic and onions, and sauté for 2-3 minutes, then add sausage and brown for 3-4 minutes more. 
  • Add the Italian seasoning, diced tomatoes and pieces of cracked lasagna noodles. 
  • Add 3 cups of tomato juice and top with sliced mozzarella. Cover and cook on the stovetop over medium heat. Cook for 12-15 minutes, until the pasta is al dente. 
  • Garnish with parsley, if desired.

One Pot Lasagna


  • 1 Tbsp Olive oil
  • 3 cloves garlic, minced
  • 1/2 yellow onion, finely diced
  • 1 1/2 pounds ground Italian sausage
  • 2 Tbsp Italian seasoning
  • 15 oz can diced tomatoes
  • 3 cup tomato juice or Bloody Mary mix
  • 10 oz fresh mozzarella, sliced into 1/4” thick pieces
  • Finely chopped parsley


Heat oil in a large saute pan. Add minced garlic and saute until aromatic. Add diced onion and saute. Add Italian sausage and cook until browned. Once browned, add seasoning and diced tomatoes. Break up lasagna noodles and add them to the pan. Add diced tomatoes and tomato juice bring to a simmer, stirring every 2-3 minutes to keep the noodles from sticking together. After 8-9 minutes, top with mozzarella slices, cover and cook 5 minutes more, until cheese is melted and pasta is al dente.
Garnish with parsley. Serve and enjoy!
